The little "health kicker"

As much as I LOVE (read: lovelovelove) sneaky, sweet treats - I also have developed a lov... nah, maybe it's just a "crush", on fresh veggie juices.


My love-hate (mostly love) relationship with veggie juices began because of my mum, thanks girl! During the lead-up to my wedding, it was decided that we needed clearer skin, shinier hair & smaller waists... We expected the juicer to become a fairy-god-mother for REAL! But... WOWZA. She really pulled through.


My personal fave juice became The Beet.


You're probably judging me right now - I get it... I've just always loved beetroots. The colour, the taste, but most of all, the properties!


Did you know: Beetroots are a great source of iron and folate. Beets also contain magnesium, nitrates, betaine and other antioxidants. Consuming beets has proven to lower blood pressure, enhance exercise performance and also assist in the prevention of dementia.

Beetroots are also famous for: moisturizing properties, accelerating hair growth, combatting anemia, controlling diabetes, cleansing your body of all nasties and preventing signs of aging.

Ingredients:

  1. 2 medium beets, scrubbed clean and tops snipped

  2. 1 medium seedless cucumber

  3. 3 cm piece fresh ginger, clean well

  4. 1 medium lemon

Method:


Prep the veggies

  1. Chop the beets, cucumber and ginger into small enough pieces, so that they can go through the juicer.

  2. Cut away the peel from the lemon, leaving most of the white pith and lemon flesh. Cut into thin slices and remove seeds.


Make the juice

  1. Set aside half of the lemon.

  2. Turn the juicer on and push everything through, alternating between the beets and the softer cucumber and lemon.

  3. When everything but the reserved lemon has been juiced, stir the juice and taste for tartness.

  4. Add the remaining lemon if you feel it can take it. If the juice is too sour, consider adding a couple of unpeeled carrots or a small cored apple.
