Hey friends! Happy Monday! I hope you all had a sweet weekend and that it is in fact a HAPPY Monday. Just thought I would jump on the blog to share my (husband's) favourite brownie recipe, made by me, a brown girl (he likes them dark). Ha. I was recently introduced to Brownie's fairer cousin, the Blondie and... I think I'm going to stick to the chocolate dream of the family (well, until I can improve the blonde's recipe myself.) We make these at least once (or thrice) a month. Let me know if you try it out! Ingredients: 1. 3 Large Eggs

2. 3/8 tsp Baking Powder

3. 1 cup Carob Powder 4. 3/4 cup Almond Flour 5. 1/2 tsp Himalayan Rock Salt

6. 1/2 cup Coconut Sugar

7. 1 tsp Vanilla Extract

8. 3/4 cup Coconut Oil 9. 2 handfuls chopped Dark Chocolate

Topping Options:

1. 1/2 cup pecan nuts/walnuts/almonds

2. 1/2 cup chopped up chocolate

3. Rice puffs or even cherries

(You can go wild really.)

Method:

1. Mix together eggs, coconut oil, sugar & vanilla extract until well combined

2. Sift in flour and baking powder and mix, again, until well combined

3. Add in carob powder and salt and... you guessed it... mix away!

4. Stir in dark chocolate and voila... Your batter is made. 5. Pour in ceramic square dish, lined with wax paper (it makes cleanup so much easier!)

6. Sprinkle with nuts and pop into the oven at 180 degrees C for 20-25 minutes (be sure to not over-bake, otherwise you will be left with a dry loaf of dryness.) Enjoy! x
