Raspberry Coconut Lollies

The easiest, yummiest, most refreshing ice-lolly!


Raspberries aren't only super delicious, but they also are a bit medicinal... Okay - okay... Maybe they aren't medically "great" for you - BUT, they do house little ninja anti-oxidants such as: vitamin C, quercetin and gallic acid, which all work together to combat cancer, heart and circulatory disease. I mean... Get these in your freezer NOW.


Did you know: Raspberries are also anti-inflammatories?! Chomp on these during the dreaded menstrual days - for scientific research of course!


Raspberry & Coconut Lollies


Ingredients:

  • 1½ cups low fat coconut milk

  • 3 tbsp maple syrup

  • 1 tbsp vanilla

  • 1 cup fresh raspberries

Instructions:

  1. Place all ingredients into a blender (I use a NutriBullet, but I'm sure any blender would suffice)

  2. Pulse in short intervals. Blend longer for smoother lollies

  3. Pour mixture into ice-lolly moulds (I purchase mine at Miniso in Cape Gate Centre)

  4. Freeze for about 5 hours (if you can wait that long!)

  5. Remove and snack away!
